Homemade Chicken fried Rice

Let us revisit the wonderful world of picky eaters, where a new dish has arrived! Praise the Lord!
 

This past week my children decided that they actually wanted to eat that colorful new dish I put in front of them. Homemade Chicken Fried Rice. I love this recipe for when we have friends come over, it’s quick, simple and delicious! Hopefully you find it as yummy as we do!
 

 

Ingredients

6 cups of cooked rice
1 – 1 1/2 pounds boneless skinless chicken breast
2 large carrots
1/2 medium sweet onion
1 cup peas
1 cup broccoli
3 tablespoons minced garlic
2 tsp minced ginger
1/2-3/4 cup soy sauce
2 large eggs
3 tablespoons water
Olive Oil

Total Prep and cook time about 35 minutes
This recipe was made for a meal prep, we get 8-10 servings out of it.

First, Cube chicken breast pieces to desired size (I cut mine to approx. 1/2″ inch)

Cook chicken in skillet on Medium heat in 1 tablespoon Olive oil
 

Add 1 teaspoon minced ginger and 2 tablespoons minced garlic to Chicken
 

 
 

 
While the chicken cooks, cut your carrots and onion to desired size ( I use frozen broccoli and peas, so if you use fresh prep these now)

 
 
 
 

 
 
Once the chicken has cooked through add carrots and cover for 5 minutes

 

Next add onion, broccoli and peas, cover 5-10 minutes, stirring as needed
 

Once vegetables have reached desired tenderness, remove from heat
 

 

 
 

 
In a bowl beat 2 eggs with 3 tablespoons of cool water

 

 
 
 

 
Add to oiled skillet

Scramble eggs and remove from heat when cooked through
 

 
 
 
 
 
 
 
Add 1 tablespoon Olive oil to large pan on Medium/High heat

Add rice to pan with soy sauce, 1 Tablespoon minced garlic and 1 teaspoon of minced ginger
 

 

 
 
 
 
Mix in Egg, chicken and veggie mix
